Farming: Biodynamic practices. Hand-harvested estate fruit.
Vinification: Grapes are pressed directly into to old oak Francois Freres and Cadus barrels. Fermentation is with natural yeasts for 12 days. Gravity racked, then pushed
with Argon to tank for a 100% gravity bottling on in-house line. 100% malolactic fermentation. Never racked off the the lees.
Aging: In tank. Bottled with minimal SO2, unfined and unfiltered.
