Vine age: 40-100 years
Farming: Sustainably farmed. Hand- and machine-harvested estate fruit.
Vinification: The carignan remains in whole clusters and goes through a full carbonic maceration in tank. The grenache is destemmed and is macerated for 3-4 weeks in concrete vats. Fermentation is with selected yeasts.
Aging: The two varieties are blended and aged in tank. The wine is bottled with a light, non-sterile filtration and a very small dose of sulfur.
