Vinification: Destemmed and fully crushed into an open top fermenter. pressed off its skins after 14 days once dry and transferred to neutral oak barrels. The wine was racked only once in the first spring after harvest and was bottled unfined and unfiltered.
Aging: 12 months in French oak, mostly used
