Soils: predominantly terra rossa – rich red-brown loam topsoil laid over a thin layer of calcrete, sitting on top of a base of the region’s abundance of white limestone.
Farming: Single-vineyard close-planted vines. Sustainably grown estate fruit.
Vinification: 25% whole cluster wild-fermented in three tonne open top fermenters, hand plunged twice daily.
Aging: 8 months in old French oak
