Soils: Granitic soils in the Polkadraai Hills above Stellenbosch, the cooler climate and sandstone soils of the Stanford Foothills on the South Coast, and sandy granite soils in the Paardenberg of the Swartland.
Vine age: 10-65 years
Farming: Hand-harvested sustainably-farmed fruit.
Vinification: Whole-bunch, semi-carbonic fermentation. A small portion (15%) was pressed directly to create a rosé and was blended back post malolactic fermentation. Fermentation took place over 10 days. After draining, the remaining grapes were pressed to old wooden barrels. A spontaneous malolactic fermentation then took place.
Aging: 10 months in old barrel.
