Farming: Working organically. Mechanical weed control, no insecticide used since 2004. Work in the vineyards and cellar are scheduled according to the lunar calendar.
Partial leaf stripping and green harvesting practiced to avoid
botyritis.
Manual Harvest.
Vinification: Pre-fermentation cold soak maceration with 20% whole bunches followed by fermentation for three weeks in stainless steel tanks with moderate pigeages.
Aging: 10 months in old oak barrel
