Soils: Glacial moraine of quartz, granite, sand, silt, and clay
Vine Age: 30 years
Farming: Certified organic. Hand-harvested estate fruit.
Vinification: The clusters are gently pressed, and grapes ferment spontaneously in temperature-controlled steel tanks with indigenous yeasts. The second fermentation takes place in the bottle.
Aging: 30 months sur latte before dégorgement. Bottles are filled with the same wine without any sugar dosage.
