Farming: Organic. Hand-harvested estate fruit.
Vinification: Manual harvest and destemmed before a cold soak of several days. Pump-overs and punch-downs during maceration. After about three weeks, the wine is moved to barrels where malolactic fermentation occurs.
Aging: 12 months in a combination of barrel (two-thirds) and stainless (one-third). Barrels are then racked to stainless steel and the wine spends its last 6 months there until bottling (without fining or filtration).
