Vinification: Fermentation begins spontaneously through the action of native yeasts present on the grape skins. Maceration then takes place for about 5 to 8 days at a controlled temperature of 15°C, during which the skins gradually release color, structure, and aromatic compounds into the wine.
Aging: In tank and bottle.
