Vine Age: 15 years
Farming: Biodynamically grown purchaed fruit. Hand-harvested.
Vinification: Whole clusters are stomped and crushed into open fermentors. Allowed to macerate for about ten days with regular pigeage twice a day.
Aging: Pressed into an old 36hL oak foudre for the remainder of fermentation and élevage on fine lees until bottling.
