Farming: Certified organic. Hand-harvested estate fruit. Harvest is carried out mostly at night to retain freshness.
Vinification: Grapes are de-stemmed and crushed. Rolle and grenache macerate for 24 hours while ugni blanc is pressed directly. Fermentation occurs in stainless steel tanks and malolactic fermentation blocked.
Aging: 7 months in tank.
